Alaine's Famous "UnCheesecake"

In Los Angeles, we always needed desserts that were non-fattening, but were beautiful and delicious.  The "uncheesecakes" really fit the bill, and my Lime UnCheesecake was featured on the PBS show, "California's Gold" with Huell Howser.  He asked (in his Tennessee drawl), "Now why would anyone want a cheesecake without the cheese?!"  

To which I replied, "Because our customers are, or want to be, slender."

We made "uncheesecakes" for the Sunday Hollywood Farmers Market in countless flavors, using seasonal, fresh, ripe fruit in the "body" of the uncheesecake, as well as the whole-fruit glaze on top.  Raspberry Uncheesecake with Blueberry Glaze, Blueberry Uncheesecake with Strawberry Glaze, Mango Uncheesecake with Pineapple Glaze,  Coconut Uncheesecake with Lime Glaze.

The uncheesecakes have a freshly-ground whole-grain oat flour crust that is fat-free.  
**The crust can also be made gluten-free.

The fillings are tofu-based and have no added fat.  They do contain sunflower seed "cheese", which is highly nutritious.  They are lightly-sweetened and are diabetic-friendly, as long as the diabetic person can eat some fresh fruit.

They truly make a beautiful presentation; I have had brides use an uncheesecake for one of their wedding cake tiers, when the tiers are presented on separate cake stands.  They are also cool and refreshing in warm or hot weather.
