First weekend of April (yes, Easter's here!), and no Easter Bunny Cakes, as in the "L.A. Days" of Alaine's Bakery, when we would make and decorate dozens of Easter Bunny Cakes that would be delivered to all the Whole Foods and natural foods markets in Southern California...
But that doesn't mean there hasn't been plenty of baking afoot! Yesterday, 3 kinds of Brownies, Fruit Fusion Bars and Banana Chocolate Chip Muffins - a lot of that was for One Earth, Danville's brand new health food store, downtown next door to Peet's. Today, two cakes: an Applespice Cake with special instructions to replace the raisins with fresh chopped apple, for Meghan, a teenager who is vegan, and a Diabetic-Friendly Banana Chocolate Chip Cake for Reichel's grandfather for Easter.
I used some of the Maple Frosting left over from Meghan's Applespice Cake to add some extra piping on this Banana Chocolate Chip Cake.
Tomorrow, I make Fresh Fruit Tarts for our family celebration.
