GMO's in our Bakery ingredients??

I have been in the baking business for over 20 years, and so have been asked many times: "Alaine, do you have any ingredients that you use that are GMO's? "

For those that do not recognize the acronym, GMO means 
"genetically modified organism".

We are a Vegan bakery, so many of the normal bakery ingredients that may be GMO do not affect us. However there are 3 areas that could or do affect us:  Wheat, Corn, and Soy.

---- Regarding Wheat: we do not use wheat flour at all, so it is not an issue. We use organic Oat flour.

---- Corn: we do use corn starch, but it is Rapunzel (organic) Corn Starch, which is non-GMO.

---- Soy: We do use tofu as an important ingredient in many of our baked goods, but we only use the brand MORINU. I just double-checked again, because many people think this tofu comes from GMO soybeans. Here is the formal reply to my request, sent out on 9/30/13:

All Morinaga Silken Tofu is manufactured in our facility in Oregon, using the same USA-grown non-GMO soybeans. Due to space constraints of the bilingual packaging, the Chinese packaging does not say “Non-GMO” on the packaging, but the same non-GMO tofu is contained inside. No matter where you purchase it, if it is the Morinaga/Mori-Nu brand, you can count on non-GMO soybeans!

            This should be proof that our Tofu is non-GMO. 

---- We also have some inquiries regarding the soy lecithin which is an ingredient in some of the chocolate chips that we use... so I checked with Nature's Best re the Sunspire grain-sweetened chocolate chips.  Esmerelda checked her non-GMO list, and Sunspire is not on it!  So, the soy lecithin that is in the chocolate chip that is on the Apricot Date Bars (for example) may be GMO....I still have to hear back from them.  In the meantime, I am ordering this week from Nature's Best and ordering the Enjoy Life chocolate chips, which are GMO-free, but are made with cane juice (which is unfortunate).

At Greenheart Bakery we have always taken pride in using the finest non-GMO ingredients --- and have taken great care to check their source and quality, so that we can assure our customers, and live up to our higher standards.

I hope that this informative post has addressed some of the important concerns of our customers, especially in regards to GMO's.
