Green Heart Menu for Rillito Park Farmers Market Sunday 2/21/21, 9am - 1 pm


Dear Green Heart Friends,

Thank you for such a successful weekend!  That was the most entrees we had ever done, and the most Valentine's Day orders we had ever done.  (Too bad it was SO windy cold on Sunday!  But if you were not stuck in the shade in one spot like Connie and I, it was not as bad in the sun.) 

And Monday, Connie and I worked as quickly as possible to make a big dent in the Apricot Date Breakfast Bar orders that we garnered as a result of the 2/4 Chef AJ Live! show.  Many were mailed off yesterday; still some remain to be made.  Of course, some people call and order 6 of those, and 6 brownies, which adds variety & more challenge on our end.

I swiped this photo off Vitacost's email that led to this recipe.  These are Apricot Bars (oat flour) frosted w/White Chocolate icing.  I won't use sulfured apricots (as they have done) but canned apricots so they will be juicy and orange in color.  We already purchased the Pasha brand vegan white chocolate chips for the frosting.  You will see these on the menu under Cookies and Bars.

I also updated the Chocolate Oat Bran Muffin, aka the Chocolate Chocolate Chip Muffin:  they always had grated carrots & oat bran.  This Sunday they will have grated zucchini instead of the carrots (and still have the oat bran). As always, they are half as sweet as our brownies, and have half the cacao of the brownies, too.

Corn Chowder
Ted will make his corn chowder: organic sweet corn,
roasted corn, carrots, celery, onions, potatoes. (GF,
SF, oil-free, nut-free) $7.00
Frozen we have: only 2 Tomato Coconut Lentil
Roasted Vegetables in Pesto
on Toasted Millet
Eggplant, yellow squash, zucchini, red bell peppers,
Portobello mushrooms. Our pesto is oil-free and
made with roasted sunflower seeds. Millet is
extremely nutritious, and a high source of B-17.

Potato “Steaks” Almondine
Thick slices of Russet potatoes, steamed, then broiled
w/tamari sauce. Served on a bed of cooked spinach;
topped with sliced almonds sautéed in white wine

Quinoa Sushi Bowl w/Orange
Miso Dressing
Quinoa, edamame, nori, radishes, carrots, cucumbers
w/a dressing of fresh orange juice, ginger, miso, rice
vinegar. (No onion, GF, no oil, no nuts). $9.
Millet Lentil Loaf: Our sprouted organic millet &
lentil loaf, on Dave’s Bread, with our cashew cheez
spread & ketchup. $8 (filling is GF, oil-free, soy-free,

Chickpea Mock “Tuna”: 8 oz container, or
on Dave’s Killer Bread. This is very low fat,
as we make the “mayo” (tofu, lemon juice,

Seitan Reuben: house made seitan corned
“beef”, sauerkraut, Daiya Swiss, with our
Russian dressing, on organic sprouted rye.
