Yummy Fall Menu 10/10

 

Dear Green Heart Friends,

This is our last menu before Ted and I and the 3 cats and 2 of our horses head to New Mexico for a week to trail ride in the Gila.  Ted knows it well; I've never been. He planned the trip so we'd be there during the full moon for an all-day ride when we'll get back after dark by moonlight.

This means we will be at Rillito 10/10.
We won't be there 10/17.
We will be there 10/24, with an abbreviated menu that we will send from our cabin in NM, which is equipped with wifi.

The new issue of Forks Over Knives magazine has come out (with my sister-in-law, Chef AJ, in it), and as usual they have gorgeous food photos.  Here's one:

This is the Roasted Garlic, Squash and Farro Stew.  I have put it on the menu. We typically have to adjust/add to the seasonings, but the base has good healthy ingredients.

The Fresh Berry Tarts are "retired" for now, replaced by the Pumpkin Mini-pies in oat crust. The Hand Pies are replaced by Organic Pear Galettes in our organic sprouted spelt crust.
I love to change ingredients with the seasons!  (I recently had a birthday cake of fresh strawberries, and as they're not really in season, the fresh cut ones on top of the cake "bled" all over ;-(

Pumpkin Lentil Soup

Fresh pumpkin cooked with red lentils, onions, carrots, celery – and seasoned with Ted’s fresh garden herbs. Thick & hearty.  (GF, SF, oil-free) $7.00

Frozen:  Zesty Harvest Vegetable w/Posole (2)

Roasted Garlic, Squash, & Farro Stew

Butternut squash, delicata squash, butter beans, kale, farro, roasted garlic, seasoned with parsley, rosemary & thyme (no sage ;-) all combine for a tasty and nutrient-dense meal.  Topped with toasted pine nuts.

 (soy-free, oil-free, GF) $12

Tempeh Coconut Curry

Fresh organic Brussels sprouts, broccoli, green beans, garbanzos, tempeh, in a coconut milk-based curry, with just the right amount of “spice” (fresh ginger & garlic). Served with organic brown Basmati.

(soy-free, no nuts, no oil) $11.

For GF, request that we leave out the tempeh.

 

Moroccan Sweet Potato Salad

Organic quinoa, sweet potatoes, zucchini, green olives, chickpeas, seasoned with Ras al Hanout (which means “top shelf”) Moroccan seasoning. Dressing is our hummus, thinned with almond milk, additionally seasoned with lemon juice and Dijon.

(GF, soy-free, oil-free) 10 oz. $9

Sandwiches

Chickpea Mock “Tuna”:  8 oz container, or on Dave’s Killer Bread. This is very low fat, as we make the “mayo” (tofu, lemon juice, apple cider vinegar, Dijon, agave), and high in fiber and plant protein. $8. (filling is GF, oil-free)

Curried ChickUn Salad: 3 grain tempeh in a dressing of mayo and mango chutney, mixed with celery, raisins & roasted cashews. 8 oz container, or on Dave’s Killer Bread. $8.50 (filling is oil-free)

Seitan Reuben:  house made seitan corned “beef”, sauerkraut, our house made cashew cheez, with our Russian dressing, on organic sprouted rye. $10

Healthy Desserts

Chocolate Cherry Cake – organic whole grain oat flour, gently sweetened with maple & agave, frosted in our silken tofu-based dark chocolate frosting & topped with organic dark cherry glaze.  By the slice- $7.00 (GF, nut-free, no oil)

Organic Pear Galettes – individual size, the pears are poached in red wine ( the alcohol is cooked out), then cooled and sliced to be arranged in our organic spelt crust, then baked.  (SF, small amount of oil in crust, no nuts) $7

Toasted Hazelnut Truffles:  dates, toasted hazelnuts, cacao.  Raw & delicious.  $2 each; 3/$5

Pumpkin Mini-Pies:  in a GF oat crust, the pumpkin filling has a silken tofu base.  Perfectly sweetened and spiced. $6.50. (no added fat, not even in crust)

Alaine’s Rainforest Cake – a loaf made of Brazil nuts, dates, 2 kinds of dried apricots, pineapple, raisins, craisins, fresh orange zest, agave and brown rice flour. 

By the slice $4;  the 1 lb. loaf $22, or 2 lb loaf $35

Chispa Meal Bar: dates, almond butter, prunes, pineapple, cranberries, Turkish apricots, Blenheim apricots, almonds, walnuts, pecans, quinoa flour, brown rice flour, ginger pieces, cinnamon, orange zest, dark chocolate mini-chips, flax seeds, inulin, glucomannan powder, pumpkin seeds, sunflower seeds, vanilla. 3 oz. This is designed to be a meal as it is very filling, as well as nourishing. $4.50
