Menu for 12/12/21


Dear Green Heart Friends,

We are in the throes of December now! Who can believe in Santa Claus, and that 2021 has only a couple of weeks remaining?

We are in the "holiday spirit", as they say.  This Friday, Leila (my helper) and I will make the Gingerbread Men & Women & Children Cookies we tested yesterday (because I had not made them in an eon of Christmases 😯).  I know we will package them in little cellophane bags but we don't yet know exactly how many fit in each bag or the price.  They are GF, sweetened w/agave -- and have fat (Earth Balance margarine).  Then, we will make some small Chocolate Peppermint Cookies, and I anticipate they will also go in the small cellophane bags.  Made of almond flour, they are GF, grain-free, sweetened w/coconut sugar -- and have coconut oil.  Yes, there is a bit of crushed candy canes on top, in addition to the peppermint extract in the cookie dough.  You'll be able to see how "cute" they turned out on Sunday, lol.

I don't know why I did the sweets first....the BIGGER news is that I am changing the lasagna that we have made for some time, and taking the recipe back to the way I used to make it for family gatherings in California (my sister had a fire captain husband who was always skeptical of anything vegan -- and he really liked this).  The description is on the menu; I'm excited to make it for you!

And -- the Red Thai Curry was so popular in November that we will have it again this weekend.

The Pear Cranberry Upside Down Cake will use some of the Royal Anne pears that  arrived last weekend from Harry & David -- and they are ripe & ready.

Southwest Black Bean Soup

Ted will make his delicious and popular black bean soup that he seasons with his epazote (he has plenty dried as his new garden is still coming up). Also, Mexican tarragon, roasted corn, red bells, some tomatoes. (GF, SF, no oil) $7

Frozen: Mushroom Barley; Zesty Vegetable w/Posole $7

GF Roasted Veggie Lasagna w/Puttanesca Sauce

I’m changing it up! I’ll make the lasagna as I used to make it for my extended family in California: no eggplant. The cashew cheez spread we make will be used throughout. Between the layers of Tinkyada organic brown rice lasagna noodles there will be roasted zucchini, sliced roasted red bells, spinach, broccoli, and a “ground beef” that we make out of lentils and beets. We will still incorporate our oil- free pesto. And Ted makes the puttanesca sauce, which is a marinara kicked up with capers, shallots, and minced Kalamata olives.

Topped with a small amount of soy-free mozzarella. (GF, soy-free, no added oil) $12.00.

Thai Red Curry

This recipe is from the current issue of Forks Over Knives magazine. I ordered 3 of the ingredients I didn’t have: galangal, ground lemon grass and ground kaffir lime leaf. *I will not be adding the dried red chilis* as we do not want “hot spicy”. In the curry will be bok choy, broccoli, asparagus, carrot, onion, garbanzos & cauliflower. Served with brown jasmine rice. $11 (GF, soy-free, nut-free, oil-free)


Chickpea Mock “Tuna”: 8 oz container, or on Dave’s Killer Bread. This is very low fat, as we make the “mayo” (tofu, lemon juice, apple cider vinegar, Dijon, agave), and high in fiber and plant protein. $8. (filling is GF, oil-free)

Curried ChickUn Salad: 3 grain tempeh in a dressing of mayo and mango chutney, mixed with celery, raisins & roasted cashews. 8 oz container, or on Dave’s Killer Bread. $9.00 (filling is oil-free)

Seitan Reuben: house made seitan corned “beef”, sauerkraut, our house made cashew cheez, with our Russian dressing, on organic sprouted rye. $10

Healthy Desserts

Banana Chocolate Chip Cake: org. whole grain oat flour, agave-sweetened, w/dark chocolate chips, and frosted in our silken tofu-based chocolate frosting $7

Pear Cranberry Upside Down Cake: ripe pear slices set in fresh cranberries. A single layer cake of organic whole grain oat flour, gently sweetened with agave, and lightly spiced with cinnamon and cloves. (GF, no added fat, nut-free) By the slice $5.

Pecan Tarts same size as the fresh fruit tarts were. GF oat flour crust. $7

White Chocolate Berry Tart: In an oat-almond flour crust, 2 layers: first, cooked mixed berries, and second, a vegan white chocolate layer of cashews, coconut milk & white chocolate. Garnished with fresh berries. (GF, soy-free) $7

Organic Apple Hand Pies: in an organic sprouted spelt crust. The apples are mildly sweetened w/agave. (soy-free, nut-free) $6.50

Alaine’s Rainforest Cake – a loaf made of Brazil nuts, dates, 2 kinds of dried apricots, pineapple, raisins, craisins, fresh orange zest, agave and brown rice flour.
