Menus for Rillito Park Farmers Market & Christmas delivery

 

Dear Green Heart Friends,

This is the last email of 2021!  You will find 2 menus attached:  for Sunday 12/19 at Rillito Park, and the Christmas Menu, which is available for delivery on Thursday, 12/23.

As you did at Thanksgiving, please email a Christmas order in a separate email (so I'll have less chance of goobling it all up :-).

I am really pleased with both these menus, even though I feared at moments that I'd never get them composed. 

Leila will deliver again for Christmas, as she did at Thanksgiving; she really enjoys doing it and in general, loves this holiday season.

If you have any special requests, please let me know. 

Above all else, I say THANK YOU, THANK YOU, THANK YOU.  This has been an amazing year for us (and with hindsight, I would make some changes, but who wouldn't?).  You have been a crucial part of the success of this year. Again, THANK YOU 💚 And, my horses thank you, too 🐎🐎🐎🐎.

I am planning to send the next menu on Wednesday, January 5th for the Jan 9th Rillito Market.  That is, if I can complete all my "deferred tasks" by then  - everything has expired!  (Well, not anything having to do with food, but everything else.)

Market hours:  9 am – 1 pm

Red Bean & Butternut Squash Stew

Butternut squash, roasted, then added to a thick soup of red beans, organic red bell peppers, carrots, onions, fresh tomatoes, and seasoned with herbs. Back by request, Ted will make this colorful & tasty stew, seasoned with his garden herbs.(GF, SF, no oil) $7

Frozen:   Southwest Black Bean. (GF, SF) $7

 

Chickpea Potato Tagine over Herbed Quinoa

This is a Moroccan dish:  chickpeas, Yukon Gold potatoes (are those Moroccan??), diced fresh tomatoes, onion, garlic, fresh ginger, lemon, and herbs combine for a hearty dish. – and over quinoa.  (GF, SF, no oil). $11.

 

 

Roasted Cauliflower Steaks &

Brussels Sprouts

Served with “creamed” spinach over farro. (As farro is not GF, let me know if you’d prefer brown basmati rice) (The “cream” sauce is an almond milk base.)   (oil-free, soy-free) $12.00

Sandwiches

Chickpea Mock “Tuna”:  8 oz container, or on Dave’s Killer Bread. This is very low fat, as we make the “mayo” (tofu, lemon juice, apple cider vinegar, Dijon, agave), and high in fiber and plant protein. $8. (filling is GF, oil-free)

Curried ChickUn Salad: 3 grain tempeh in a dressing of mayo and mango chutney, mixed with celery, raisins & roasted cashews. 8 oz container, or on Dave’s Killer Bread. $9.00 (filling is oil-free)

Millet Lentil Loaf: Our sprouted organic millet & lentil loaf, on Dave’s Bread, with our cashew cheez spread & ketchup. $8.50 (filling is GF, oil-free, SF)
*You may also order the Millet Lentil Loaf, no bread, as a small loaf. $12.

Seitan Reuben:  house made seitan corned “beef”, sauerkraut, our house made cashew cheez, with our Russian dressing, on organic sprouted rye. $10

 

Healthy Desserts

Chocolate Cherry Cake:  org. whole grain oat flour, agave & maple-sweetened, w/organic cherry glaze, and frosted in our silken tofu-based chocolate frosting $7

Raw Chocolate Peppermint Truffles:  in a base of almonds, raw cacao, cacao nibs, flavored w/peppermint extract…and Ted’s deciding what he will roll them in ;-).   (crushed peppermints?  Tinted red sugar?). $2/each or 3/$5

 

 

Pecan Tarts – same size as the fresh fruit tarts were. GF oat flour crust. $7

White Chocolate Berry Tart:  In an oat-almond flour crust, 2 layers:  first, cooked mixed berries, and second, a vegan white chocolate layer of cashews, coconut milk & white chocolate.  Garnished with fresh berries. (GF, soy-free) $7

Organic Apple Hand Pies:  in an organic sprouted spelt crust. The apples are mildly sweetened w/agave. (soy-free, nut-free) $7.00

Alaine’s Rainforest Cake – a loaf made of Brazil nuts, dates, 2 kinds of dried apricots, pineapple, raisins, craisins, fresh orange zest, agave and brown rice flour. 

By the slice $4;  the 1 lb. loaf $22, or 2 lb loaf $35

*Let me know if you’d like the white burlap gift bag, and box.  Then the 2 lb. cake is $40.

Breakfast

Date Walnut Scones w/TEFF flour.  I’ve been getting requests for the teff flour, so I will use it to make these scones.  (GF, SF) $4.

Fresh Pear Streusel Coffeecake (GF, SF, no added oil) $5 Streusel is made of pecans, dates, coconut, cinnamon & nutmeg)

Chocolate Glazed (baked) Donuts (GF, SF, oil-free, no nuts) 4.00

Pumpkin Pecan Loaves 10 oz, Banana Walnut 10 oz Loaves, Cranberry Orange Walnut 10 oz Loaves  (GF, no added oil) 7.00

Gingerbread Loaves (soy-free, GF, no added oil) $7.

Cookies & Bars

Chocolate Peppermint Cookies, 2 in a baggie, $3. (GF, SF). Made of almond flour.  These are YUMMY!

Gingerbread Cookies – decorated men, women, children, saguaro cacti, in a small cellophane bag $3 (GF)

Cranberry Bliss Bars (GF, oil-free) a bar made with organic whole grain oat flour, with a touch of orange zest, tart fresh cranberries & walnuts, sweetened w/coconut sugar & topped with vanilla cream cheez frosting (tofu-based) 4.50

*Samoa Cookies* dipped in chocolate; healthy version of the Girl Scout cookies 3 small cookies in container (SF, GF, no nuts) $4.

Oatmeal Applesauce w/Chocolate Chip (SF, GF, no added fat, no nuts) 4.50

“New” Oatmeal Chocolate Chip Cookie made with almond flour and almond butter. (SF, GF, the almond butter is the “fat”) $4.50

Christmas Menu 2021

                        (as we did at Thanksgiving, for a delivery fee of $5 - $15)

 

 

 

 

Fig Balsamic Holiday Loaf: 

A festive combination of flavors (and no mushrooms) and textures:  sweet potatoes, lentils, walnuts, rolled oats, and yes, dried Mission figs, seasoned with onion, garlic, celery, Dijon, tomato paste, tamari and balsamic vinegar.

A full loaf serves 8.  $40. 

Mini-loaf (the size of our Banana Walnut Bread) $15.

 

Mushroom Ragout over Garlic Mashed Potatoes:

The mashed potatoes are made without oil/fat: organic Yukon Gold potatoes steamed with garlic cloves and mashed with almond milk. The ragout: crimini, shiitake, portobella mushrooms simmered in broth, sherry, seasoned, and garnished with parsley. (soy-free, oil-free, GF) $12

Vegetable Paella

Lion’s Mane Mushrooms, yellow squash, eggplant, plum tomatoes in a white wine sauce. Allioli on the side (garlic mayo sauce) On saffron rice with peas & green olives. (GF, SF, nut-free, oil in allioli) $12.00.

 You may also order containers of our Cashew Cheez Spread, which is great on crackers, sandwiches, etc.  4 oz or 8 oz containers. 4 oz $6./  8 oz $10

 

Black Bean Greek Olive Mushroom Walnut Tapenade, also excellent on crackers or veggies. This has been a favorite in my family since I started making it in the early ‘90’s; my sister requested it for her wedding reception in the late ‘90’s.  Our soup-size container $14.

 

 

Silken Tofu Pumpkin Pie w/organic spelt crust. 9-inch deep-dish $30. If you need GF, I can make an oat flour crust – which is not a shaped pastry crust.

There is no fat in the pumpkin filling; there is a small amount of coconut oil in the spelt crust (most fat is replaced out with rice milk and the agave sweetener).  The oat crust has no fat. Also Pumpkin Mini-pies (as I have each week at the farmers market) in spelt crust OR order with oat crust:  $6

 

Organic Apple Pie in organic spelt crust, lattice top.  9-inch deep-dish $35.  We’re using organic Granny Smith apples.

 

Pear Cranberry Upside Down Cake is delicious and beautiful.  Made w/o any added fat, not too sweet.  10-inch    $30.

 

Pecan Pie:  organic spelt crust. 9-inch deep-dish  $35

GF Pecan Tarts:  These can be individual size (5”) as I have at the market $7 Also, 9-inch or 11-inch. Prices TBD

 

Pumpkin Pecan Uncheescake:  as in the photo; our tofu pumpkin uncheesecake decorated w/pecans around the top edge.  6-inch $30 (serves 6). 10-inch $40 (serves 10). Please note the top can “crack” as there is no added fat – it is not a “problem”.

 

Chocolate Pumpkin Uncheesecake.  GF, no added fat.  Silken tofu base for the chocolate mousse, which is spread on top of the (silken tofu-based) pumpkin uncheesecake.  6-inch $35 (serves 6)   10-inch $45 (serves 10)
