Menu for Rillito Park Farmers Market Sunday 1/9/22, 9 am - 1 pm

 


Dear Green Heart Friends,

We welcome you to '22! Hopefully, your holidays held some rest for you, and some joyful moments as well.  Hopefully, you are well, and feeling encouraged for the new year.  I know I'm rested and ready!  (And I got my office MUCH more organized, and the floor clear of moving boxes😁).

This is good because Ted and I will work without our usual helpers (Cathy & Leila) until next week.  Hence, a particular part of the menu may seem "abbreviated" - well, that's why.  Ted will make 2 soups this week since it's the perfect time of year for hearty soups. (Odile returns to Rillito this Sunday, to help me in the booth :-)

I will make a Stir-fry recipe from Forks over Knives.  The peanut sauce is light, with fresh lime juice; it's not the peanut sauce that I usually make.  There's no fresh ginger, but there is some garlic.  The vegetables (sliced Napa cabbage, red & yellow bells, snow peas) make a colorful dish. I will add sliced tempeh (I got some without barley, so it's GF), and organic brown jasmine rice on the side (you'll put your stir-fry over the rice when you heat and eat :-).

I will also make the Sun-dried Tomato and Asparagus Quiche.  I may not have time this week to also make a GF crust - we shall see how the orders come in.

Today Kathy Kirchner (My Rawsome Foods) and I visited Midtown Market & Deli at the invitation of Tanya Barnett, who is opening this vegan establishment at the NW corner of 5th and Rosemont.  Of course delays in the construction, remodeling and permitting process, so the Grand Opening scheduled for Jan 17th will instead be in February.  Yes, some of our food will be available there :-). A number of vegans are pulling together to get this venture going, and it's exciting!

Organic Black-eyed Peas w/sausage and Corn Muffins

Ted is making his black-eyed peas for the new year,  adding the vegan sausage that we make (pinto bean-based), & organic spinach on top. (GF, soy-free)  $7.50

Our whole-grain MINI corn muffins on the side. (GF, soy-free, oil-free)  $1/each  Please indicate how many you’d like.

Corn Chowder

Ted will make his corn chowder with organic corn, roasted corn, potatoes, onions, peas, celery. (GF, SF, oil-free) $7.50

Frozen:   We have 4 Red Bean & Butternut Squash Stew  (GF, SF) $7


Sun-dried Tomato & Asparagus Quiche

sun-dried tomatoes, fresh asparagus, nutritional yeast, onion, in an organic tofu-based filling, topped with fresh tomato & Swiss cheez, in a sprouted spelt crust. ( filling is oil-free; crust is low oil) $9.00/slice

Stir Fry w/Peanut Sauce

Napa cabbage, red & yellow bells, snap peas, onions & GF seitan in a mild peanut-lime sauce (from Forks Over Knives) with organic brown jasmine rice.  (GF, soy-free, no oil) $10.

Sandwiches

Chickpea Mock “Tuna”:  8 oz container, or on Dave’s Killer Bread. This is very low fat, as we make the “mayo” (tofu, lemon juice, apple cider vinegar, Dijon, agave), and high in fiber and plant protein. $8. (filling is GF, oil-free)

Curried ChickUn Salad: 3 grain tempeh in a dressing of mayo and mango chutney, mixed with celery, raisins & roasted cashews. 8 oz container, or on Dave’s Killer Bread. $9.00 (filling is oil-free)

Seitan Reuben:  house made seitan corned “beef”, sauerkraut, our house made cashew cheez, with our Russian dressing, on organic sprouted rye. $10

 

Healthy Desserts

Organic Carrot Cake:  org. whole grain oat flour, carrots, pineapple, pecans & raisins – agave-sweetened, and frosted in our silken tofu-based vanilla cream cheez frosting (GF, no added oil)  $7/slice

Raw Chocolate Cherry Truffles:  in a base of pecans, raw cacao, organic dried cherries. (GF, SF, no added oil).  $2/each or 3/$5

Meyer Lemon Bars:  set in an organic whole-grain oat flour crust, sweetened with organic birch (diabetic-friendly & low calorie). (GF, no added fat) $5

Pecan Tarts – same size as the fresh fruit tarts were. GF oat flour crust. $7

Organic Apple Hand Pies:  in an organic sprouted spelt crust. The apples are mildly sweetened w/agave. (soy-free, nut-free) $7.00

Alaine’s Rainforest Cake – a loaf made of Brazil nuts, dates, 2 kinds of dried apricots, pineapple, raisins, craisins, fresh orange zest, agave and brown rice flour. 

By the slice $4;  the 1 lb. loaf $22, or 2 lb loaf $35

*Let me know if you’d like the white burlap gift bag, and box.  Then the 2 lb. cake is $40.
