Green Heart Menu for Rillito Park Farmers Market Sunday 2/27

 

Dear Green Heart Friends,

I hope you are warm and cozy on this cold, windy day!  Ted and I have just come in from covering the unfinished roof of the new tack shed he has been building with a tarp, that he had to heavily weigh down with pavers.  Let's hope we get some rain to accompany all this wind.  Checking the weather forecast, I see that by Sunday, it will be lovely again....followed by high '80's next week(!). 

Ugh - horse racing season begins this weekend at Rillito.  We were spared in 2021 but here we go again.  The market moves a half-hour earlier (8:30 - 12:30).  The parking lot gets more crowded as noon approaches, although there will be parking attendants directing the confusion. Still....in 2020, the first and last weekends of the racing season were busy; the "middle" weekends were not.  Racing season runs thru Sunday, April 3rd.

Let's talk food!  I "captured" a photo of Egyptian Koshari, which we will make this weekend.  It is assembled in layers of lentil rice, WW pasta, garbanzos seasoned with cumin, a piquant tomato sauce (vinegar), and topped with sauteed onions.  Traditionally, the onions are breaded and cooked in oil, but we will saute and caramelize them w/o oil.

And our lasagna:  I will make it similar to how I made it in December, which was a change from the past couple of years.  You'll read the description, and see it's got lots of veggies.

The Chocolate Raspberry Hearts were requested, and so you will see them on the menu.  Also an organic Strawberry Cake - even the frosting will have pureed strawberries in it, and therefore, will be pink.

Green Heart Menu for February 27th, 2022

Market hours:  8:30 am – 12:30 pm

The market hours are ½ hr earlier due to the horse racing season at the track behind us.

Zesty Vegetable

Ted will make his tomato-based vegetable soup w/peas, carrots, onions, corn, POZOLE. Seasoned with his garden herbs. (GF, SF, oil-free) $7.50

Frozen:  Cream of Broccoli (GF, no nuts or added oil) $7.

GF Roasted Veggie Lasagna w/Puttanesca Sauce

I’ve changed it up! I’ll make the lasagna as I used to make it for my extended family in California: no eggplant. The cashew cheez spread we make will be used throughout. Between the layers of Tinkyada organic brown rice lasagna noodles there will be roasted zucchini, sliced roasted red bells, spinach, broccoli, and a “ground beef” that we make out of lentils and beets. We will still incorporate our oil- free pesto. And Ted makes the puttanesca sauce, which is a marinara kicked up with capers, shallots, and minced Kalamata olives.

Topped with a small amount of soy-free mozzarella. (GF, soy-free, no added oil) $12.00.

 

Egyptian Koshari

Koshari is a hearty vegan dish of lentils, brown rice, chickpeas, whole wheat pasta, a vinegar & tomato sauce, topped with sautéed onions. (see photo in cover email). (SF, nut-free, no added oil) $11.

 

Sandwiches

Chickpea Mock “Tuna”:  8 oz container, or on Dave’s Killer Bread. This is very low fat, as we make the “mayo” (tofu, lemon juice, apple cider vinegar, Dijon, agave), and high in fiber and plant protein. $8. (filling is GF, oil-free)

Millet Lentil Loaf: sprouted organic millet & lentils cooked with onion & herbs, then sliced as a loaf. On Dave’s Killer Bread w/our house made cashew cheez and ketchup. (SF, no added fat)

Yes, you can order the Millet Lentil Loaf by itself. Small loaf is $12.00

 

Seitan Reuben:  house made seitan corned “beef”, sauerkraut, our house made cashew cheez, with our Russian dressing, on organic sprouted rye. $10
