Presidents' Day Menu 2/20/22 Rillito Park Farmers Market

 

Dear Green Heart Friends,

Brrrr - cold today, but should be warmer again by Sunday.  We have had a request for our Summer Beet Borscht, which is a cold soup.  I am putting it on the menu to see if anyone else has a hankering....

Ted, Wendy (his sister), and I decided to venture from our location at Saguaro East to Saguaro West yesterday for a change of scenery.  We climbed Mt Wasson, and boy, it was windy!  Little did we know it was also windy here after we left.  When we got home at 8 pm, we discovered all that the wind had done: broken a deck chair, moved a huge canopy 6 ft sideways, and blew all the horses' gates closed so they couldn't get to their shelters (they were out in their turnout that Ted had just plowed the evening before).  But all is good; the horses were mollified after we fed them their hay.

is on the menu this week, as is the Red Thai Curry, and Spinach & Mushroom Quiche.  With Presidents Day, there are the obligatory Cherry Hand Pies ;-).  I hope you find some things to your liking!

Mushroom Barley Soup

Ted will make Mushroom Barley Soup. (SF, oil-free, nut-free) $7.50

Summer Borscht w/Cucumber & Fresh Dill

Yes, beets pureed, & with coconut yogurt. Very refreshing. (Cold soup!) (GF, SF, oil-free, nut-free) $7.50

Ted’s Bean Pizza

On our white whole-wheat pizza crust, Ted layers sautéed carrots, zucchini, onions, on a tomato sauce base, and tops with a layer of black beans, and soy- free vegan mozzarella. This is hearty, and we cut it in large squares. (soy-free, oil-free) $11/serving

Thai Red Curry

This recipe is from Forks Over Knives magazine: bok choy, broccoli, asparagus, carrot, onion, garbanzos & zucchini. Served with brown jasmine rice. $11 (GF, soy-free, nut-free, oil-free)

Spinach & Mushroom Quiche

Organic spinach and mushrooms, nutritional yeast, onion, in an organic tofu-based filling, topped w/Swiss cheez, in a whole-grain spelt crust.

( filling is oil-free; crust is low oil) $9.00/slice

Whole 9” Quiche $30.

Gluten-free option: GF crust, OR no crust (for grain- free) $9/slice. Whole 9” GF Crust Quiche $35.

Sandwiches

Chickpea Mock “Tuna”: 8 oz container, or on Dave’s Killer Bread. This is very low fat, as we make the “mayo” (tofu, lemon juice, apple cider vinegar, Dijon, agave), and high in fiber and plant protein. $8. (filling is GF, oil-free)

Curried ChickUn Salad: 3 grain tempeh in a dressing of mayo and mango chutney, mixed with celery, raisins & roasted cashews. 8 oz container, or on Dave’s Killer Bread. $9.00 (filling is oil-free)

Seitan Reuben: house made seitan corned “beef”, sauerkraut, our house made cashew cheez, with our Russian dressing, on organic sprouted rye. $10
