Green Heart Menu for 3/20 Rillito Park Farmers Market

 

Dear Green Heart Friends,

We are in the midst of ever-changing change.  My helper, Leila, and I have been "crushing it" the past 3 weeks to provide items for the front display case at Midtown Vegan Market and Deli...delivering three times a week.  We intend to have a routine that is smoother, with time.

Odile is no longer working at Rillito with me on Sunday mornings; now we have Zoe, who debuted last Sunday.  We will miss Odile, who has done an excellent job.  We welcome Zoe, who is game to take her place. 

Now Cathy has given her notice, so she can spend more time with her great-nephew, whose mother passed away last August.  She's been trying to juggle her full-time position at Sabino Cycles, her personal life, and come in on Saturday mornings to cook up a storm (a whole foods plant-based storm, that is).  I will really miss her help, support, input, and good cooking.

And so:  if you know of someone who would love to cook up the above-described storm on Saturdays (typically 9 am - 3 pm) with me, please have them call me or email me.  I can explain to them what all is involved.

Now the menu!  By request:  Mac and Cheez w/Roasted Veggies - yum!  I also will be making a wrap filled with one of my favorites from the past (the '90's):  the 5-grain combination, that came from a holistic naturopath in Los Angeles.  That is: whole wheat berries, oat groats, millet, brown rice, rye berries - all organic.  I used to cook those and add chopped carrots and celery, typically with extra virgin olive oil (because I was told to eat that then).  I will be using a whole wheat lavash.  I will use our mayo instead of the olive oil - although not very much, because on the side will be our Green Goddess dressing for you to add, or use as a dipping sauce.

As we have new folks on this email list, I would like to mention that I am using as many organic ingredients as I can get my hands on....so I'm sure we might find one or two ingredients per week that are not organic, but almost every single ingredient is organic.  We are not adding oil to recipes EXCEPT in the tart shells, hand pie crust, and scones.  Those have a small amount of coconut oil.  There is Earth Balance margarine in the Chocolate Chip Pecan Cookies, the Molasses Ginger, and in the scones.

Ted has been planting, and if you had the Tuno last week, you may have noticed that it has fresh epazote in it; that was the first week it is back :-).  We continue to season with our fresh herbs, supplemented by some we buy.  This week our fresh mint will be in the Cabbage Tabbouleh Salad.

Frozen Soups J

 Mulligatawny, “Cream” of Cauliflower,

Cabbage Tabbouleh Salad

A variation on traditional tabbouleh:  the bulgar wheat is tossed with shredded cabbage, parsley, mint, white onion, lemon juice, for a refreshing and crunchy salad.  There will be red potatoes filled with our hummus on the side (vegan devilled eggs).  We will also have a dressing on the side, made by  thinning the hummus.  (soy-free, no oil, nut-free). $9.00

Mac n’Cheez w/Roasted Veggies

Whole wheat pasta in our cheez sauce, topped with roasted cherry tomatoes, baby bella mushrooms, red bell peppers & sweet onions.

Lavash Wrap

The 5-grain combination:  whole wheat berries, rye berries, oat groats, millet, & brown rice cooked and mixed with chopped carrots and celery, with a bit of our mayo.  Wrapped in a whole wheat lavash (Armenian flat bread), with our Green Goddess on the side.  (Ted makes that using his cashew cheez as a base.)

Chickpea Mock “Tuna”:  8 oz container, or on Dave’s Killer Bread. This is very low fat, as we make the “mayo” (tofu, lemon juice, apple cider vinegar, Dijon, agave), and high in fiber and plant protein. $8. (filling is GF, oil-free)

Curried ChickUn Salad: 3 grain tempeh in a dressing of mayo and mango chutney, mixed with celery, raisins & roasted cashews. 8 oz container, or on Dave’s Killer Bread. $9.00 (filling is oil-free)

Seitan Reuben:  house made seitan corned “beef”, sauerkraut, our cashew cheez spread, with our Russian dressing, on organic sprouted rye. $10

Healthy Desserts

Toasted Almond Torte w/Organic Strawberries (GF, no added fat or cane sugar; frosting is soy-based) $7.50/slice

“Laura’s Custom Uncheesecake”:  our silken tofu-based uncheesecake with marsala added.  Some of our chocolate mousse is blended into the body.  Then the uncheesecake is topped with our organic cherry glaze.  $7.50/slice. (GF, no added fat, nut-free)

Alaine’s Rainforest Cake: just made a batch, and so we have the slices $4, the 1-lb loaves $22, and even the 2-lb “bricks” $35. (Brazil nuts, Turkish apricots, pineapple, dates, raisins, craisins, fresh orange zest, brown rice flour, and agave – all organic)
