Green Heart Menu for Rillito Park Farmers Market Sunday 1/22/23 9 am - 1 pm

 

Dear Green Heart Friends,

Here is a wedding cake I made for a lovely Australian bride, who flew here to marry a local gent.
 
They needed a diabetic-friendly cake that they could take with them to Yuma, where they were to be married in the presence of his older (diabetic) family members.  She chose the Apple Spice Cake w/Maple Frosting (I used maple extract instead of syrup; both cake and frosting were sweetened with the organic birch xylitol.)  And as often happens with clients who are not from here, she chose a "desert theme" of succulents for decoration.  Organic raspberries were dusted in cacao powder to look like rocks; ground walnuts look like smaller rocks.  (The succulents were ordered from Amazon and are NOT edible.). And she wanted the writing on top of the cake, which is RARE for a wedding cake.



Muddy horses!  We're grateful for the rain, and also for the "break" so that the corrals can dry out, and the mud can come off the horses.  I'm disappointed that the ground is not bursting forth with baby green grass, like it is in Northern California, and like it did when we lived on the Tanque Verde wash; the horses are MORE disappointed :-( because that's "green ice cream" to them!

Butternut Squash and Red Bean Stew

Fresh butternut squash,  roasted, then added to a thick soup of red beans, organic red bell peppers, carrots, onions, fresh tomatoes, and seasoned with herbs.  ( GF, soy-free,  oil-free) 16 oz. $7.50

 

Thai Red Curry

This recipe is originally from Forks Over Knives magazine.  Not “hot spicy”. In the curry will be bok choy, broccoli, asparagus, carrot, onion, garbanzos & zucchini. Served with organic brown jasmine rice. $13 (GF, soy-free, nut-free, oil-free)

*You can request organic quinoa instead of rice*

 

Shepherd’s Pie

Assorted vegetables & white beans in our almond milk-based gravy, seasoned with sage & thyme, topped with a sweet potato “crust”.  (GF, SF, oil-free) $13.00. *no mushrooms this time*

Sandwiches

Curried ChickUn Salad: 3 grain tempeh in a dressing of mayo and mango chutney, mixed with celery, raisins & roasted cashews. 8 oz container, or on Dave’s Killer Bread. $10.00 (filling is oil-free)

Millet Lentil Loaf:  Our sprouted organic millet & lentil loaf, on Dave’s Bread, with our cashew cheez spread & ketchup.  $10 (filling is GF, oil-free, SF)

You may also order a small loaf, no bread $12.

Seitan Reuben:  house made seitan corned “beef”, sauerkraut, our house made cashew cheez, with our Russian dressing, on organic sprouted rye. $11

 

Healthy Desserts

Organic Meyer Lemon Bars w/oat flour crust, sweetened with xylitol (GF, oil-free) $5

Organic Carrot Cake: carrots, pineapple, pecans, raisins in oat flour, agave-sweetened, with our silken tofu-based vanilla frosting (GF, no added oil) $7/slice

 

Raw Truffles:  Chocolate Cherry (pecans, dates, cacao, dried cherries, vanilla, chocolate nibs) 2.50/each; 3/$6

Organic Blueberry Hand Pies:  in an organic sprouted spelt crust. The apples are mildly sweetened w/agave. (soy-free, nut-free) $7.50

Alaine’s Rainforest Cake– a loaf made of organic: Brazil nuts, dates,  apricots, pineapple, raisins, craisins, fresh orange zest, agave and brown rice flour. The dried fruit is unsulfured.

By the slice $4.50; the 1 lb. loaf $25, or 2 lb loaf $45

Breakfast

 SAVORY Muffin:  Organic oat flour, chickpea flour, NO SWEETENER, sundried tomatoes, Italian herbs, pumpkin seeds (GF, SF, no added oil, no nuts) $4.50

Pear Streusel Coffee Cake: organic whole-grain oat flour, sweetened with coconut sugar.  Streusel is dates, pecans, coconut shreds, cinnamon, nutmeg. (GF, SF, oil-free) 5.00

Wendy’s Wonder Bars:  made of ripe banana, rolled oats, craisins & almonds – that’s it!  No added sweetener, and very nourishing and filling.  Courtesy of Ted’s sister, Wendy J  (GF, SF, no added fat) $4.50

Orange Coconut Pineapple Streusel Coffee Cake Muffin (GF, SF, no added oil.  Streusel is dates, pecans, coconut shreds.). $4.50

Chocolate Glazed (baked) Donuts (GF, SF, oil-free, no nuts) 4.00

Banana Walnut Loaf 10 oz. ( GF, soy-free, no added oil) $7.50

Cranberry Orange Walnut Loaf 10 oz. (GF, no added oil) 7.50

 

Cookies & Bars

Nutter Butter Cookies: oat flour, maple syrup, peanut butter, vanilla. These are shaped into “peanuts”, and filled with peanut butter blended with Better Than Cream Cheese – so they should be kept cold. They sell very well at Midtown Vegan Deli.  3 filled cookies in a container.  (GF, no added oil) $5.

*Samoa Cookies* dipped in chocolate; healthy version of the Girl Scout cookies 3 small cookies in container (SF, GF, no nuts) $4.50

Magic Bars:  on top of an almond flour crust, layers of chopped dates, pecans, coconut set in coconut milk, and topped with chocolate chips.  (GF, SF, no added fat) $5.

Cranberry Macadamia White Chocolate Chip Cookies:  these are small, so 3 cookies in a clamshell (GF, soy-free) $4.50

Oatmeal Applesauce w/Chocolate Chip (SF, GF, no added fat, no nuts) 4.50

Chocolate Chip Pecan (SF, GF) 4.50

Molasses Ginger (GF, no nuts) 4.50
