This is the Baked Vegetable Biryani; the recipe is from Forks Over Knives, so it's a new recipe for us. You'll see a lot of "tried and true" yums on the menu :-).
I ride the bay Arabian mare, Baloo. She has 9 years trail experience at this point, yet she is accustomed to following behind Canela, Ted's big Morgan mare, who is an incredibly fearless trail horse. Baloo is hot-blooded and high-strung, so she walks on her tiptoes with her eyes constantly scanning for predators and scary things (like weird-shaped saguaros, and garbage cans, and hikers). Now that Canela is staying home as Billy goes out, Baloo has had to lead, so she is learning and growing, too. This 4th Billy ride was the first time she FINALLY calmed down, and led with confidence. She enjoyed it; after all, she has "seniority" over Billy, and she knows it. Still, when she heard running water ahead of us on the trail, she deftly made a U-turn; she has never enjoyed crossing water, especially moving water. Historically, Canela leads effortlessly into the water; Baloo panics because she doesn't want to be left behind, so she fusses a lot and then does her best to leap over the water if at all possible.

Baked Vegetable Biryani
A classic Indian dish, typically made stovetop, baked in the oven, as a casserole, with layers of organic brown basmati rice and vegetables: green beans, carrots, red bells, all diced in one layer, and cauliflower, eggplant & zucchini diced in another layer, seasoned with garam masala, fresh ginger, garlic & onions. (GF, soy-free, nut- and oil-free) $13.
Sandwiches
Chickpea Mock “Tuna”: 8 oz container, OR on Dave’s Killer Bread. This is very low fat, as we make the “mayo” (tofu, lemon juice, apple cider vinegar, Dijon, agave), and high in fiber and plant protein. (filling is GF, oil-free, nut-free) $9.
Seitan Reuben: house made seitan corned “beef”, sauerkraut, our house made cashew cheez, with our Russian dressing, on organic sprouted rye. $11
Lentil Burger Patties: a delicious alternative to frozen “factory-made” patties that always seem to be too spicy, too salty, or too bland. They contain lentils, brown rice, black beans, GF bread crumbs and onions and seasonings (cumin & sage). You will heat them up in a pan on the stove. Can be eaten on a bun (let me know if you need a Dave’s Killer Bun), or by itself. These keep beautifully in the freezer; I kept several over 6 mos! (GF, SF, no added fat) 2 patties $7.
