Green Heart Menu for Rillito Park Farmers Market Sunday, 1/29/23, 9 am - 1 pm


Dear Green Heart Friends,

The menu is pretty straight forward this week, and if you are new, it is the attachment.  If there is something you'd like to order, please email me with what you'd like.  It will be ready for you to pick up Sunday morning at the Green Heart Bakery booth in Pavilion 1 at Rillito Park Farmers Market from 9 am to 1 pm.

This is the Baked Vegetable Biryani; the recipe is from Forks Over Knives, so it's a new recipe for us.  You'll see a lot of "tried and true" yums on the menu :-).

And because I keep getting asked about Billy, our new horse, a leopard Appaloosa, here's the latest:

Ted and I got to take our new horse, Billy, out for his 4th trail ride on a perfect day before I went to California.  He is learning; clearly, whatever Ted was told about his experience was not true.  That's okay as each of our horses, in turn, have learned, and as they learn new things, their confidence grows and it expands their world.  In the picture below, both Billy and Baloo are squinting in the sunshine:

I ride the bay Arabian mare, Baloo.  She has 9 years trail experience at this point, yet she is accustomed to following behind Canela, Ted's big Morgan mare, who is an incredibly fearless trail horse.  Baloo is hot-blooded and high-strung, so she walks on her tiptoes with her eyes constantly scanning for predators and scary things (like weird-shaped saguaros, and garbage cans, and hikers). Now that Canela is staying home as Billy goes out, Baloo has had to lead, so she is learning and growing, too. This 4th Billy ride was the first time she FINALLY calmed down, and led with confidence.  She enjoyed it; after all, she has "seniority" over Billy, and she knows it.  Still, when she heard running water ahead of us on the trail, she deftly made a U-turn; she has never enjoyed crossing water, especially moving water. Historically, Canela leads effortlessly into the water; Baloo panics because she doesn't want to be left behind, so she fusses a lot and then does her best to leap over the water if at all possible.

We decided to dismount, and Ted said he'd cross first --- and then we learned that Billy has not crossed water before.  He planted his legs like a mule and stood his ground on the bank.  Ted told me to get behind, and push him forward while Ted led from the front.  As I pushed, and clucked, and urged him on, "Come on, Billy"", I still held Baloo's reins as she was at my shoulder.  Billy didn't want to budge but Baloo, hearing all this clucking and urging, got fed up!  She went around me to cross the water; I had to scramble to keep up and cross the water with her.  It was as if she were telling him, "Oh, come on!  It's not THAT big of a deal - even I can cross water with less fuss than this!"  I tied her to a bush on the other side, crossed back and helped Billy cross, as he could now see that Baloo had survived the ordeal.  Too bad I didn't get a photo of his facial expression after he crossed; he seemed to be appalled that his legs were WET.

We rode on without incident to Hope Camp.  On the return, NOTHING will stop or faze the horses because, you know, they're ON THE WAY HOME.  Baloo led; we stayed on the horses, and she carefully but quickly sought out the exact spot she had crossed the water before - and Billy stayed close behind, no hesitancy at all.  That is a milestone for him :-).  At home in the turnout, he is mischievous, and likes to get everybody else running around.  (He's half the age of the next youngest horse.)

 Zesty Harvest Vegetable

Yes, this is the soup with the pozole!

Tomato base, potatoes, onions, carrots, celery, pozole, epazote (GF, SF, no nuts) 16 oz. $7.50

Three Bean Chili w/Corn Muffins

Black, kidney & pinto beans in a flavorful (but not “hot spicy”) chili. We will add some of Ted’s sausage (GF, made of pinto beans, oat flour & seasonings); I also have the lentil-based “ground beef” that I make.  (GF, soy-free, no added nuts or oil). The organic corn mini-muffins are also GF, soy-free, nut- & oil-free).

$9.50 includes 2 corn mini-muffins

Buckwheat Soba Noodles

100% buckwheat soba (no wheat) in a peanut sauce w/asparagus, green beans, carrots & green onions. 10 oz. (GF, SF, small amount of toasted sesame oil) $12.00


Baked Vegetable Biryani

A classic Indian dish, typically made stovetop, baked in the oven, as a casserole, with layers of organic brown basmati rice and vegetables:  green beans, carrots, red bells, all diced in one layer, and cauliflower, eggplant & zucchini diced in another layer, seasoned with garam masala, fresh ginger, garlic & onions. (GF, soy-free, nut- and oil-free) $13.


Chickpea Mock “Tuna”:  8 oz container, OR on Dave’s Killer Bread. This is very low fat, as we make the “mayo” (tofu, lemon juice, apple cider vinegar, Dijon, agave), and high in fiber and plant protein.  (filling is GF, oil-free, nut-free) $9.

Seitan Reuben:  house made seitan corned “beef”, sauerkraut, our house made cashew cheez, with our Russian dressing, on organic sprouted rye. $11

Lentil Burger Patties: a delicious alternative to frozen “factory-made” patties that always seem to be too spicy, too salty, or too bland. They contain lentils, brown rice, black beans, GF bread crumbs and onions and seasonings (cumin & sage). You will heat them up in a pan on the stove. Can be eaten on a bun (let me know if you need a Dave’s Killer Bun), or by itself. These keep beautifully in the freezer; I kept several over 6 mos! (GF, SF, no added fat) 2 patties $7.


Healthy Desserts

Organic Meyer Lemon Bars w/oat flour crust, sweetened with organic birch xylitol (GF, oil-free) $5

Raw Truffles: Almond Overjoy (almonds, dates, coconut) $2.50/each or 3/$6

Apple Spice Cake: organic oat flour, spices, raisins & applesauce, with maple silken tofu frosting (GF, no added oil) $7/slice

Triple Berry Cherry Uncheesecake

Crust: Organic whole grain oat flour, maple syrup, cinnamon. Filling: organic silken tofu, agave, Better Than Cream Cheese, lime zest, arrowroot. Topping: Cherries, blueberries, raspberries, blackberries, cornstarch. (GF, no added fat, no nuts) $7./slice

Organic Triple Berry Mini-pies w/streusel top (pecans, coconut, dates, maple syrup) (GF, SF, oil-free) $7.


Alaine’s Rainforest Cake– a loaf made of organic: Brazil nuts, dates,  apricots, pineapple, raisins, craisins, fresh orange zest, agave and brown rice flour. The dried fruit is unsulfured.

Blue Corn Mesquite WAFFLES: 2 waffles,4” x 4”, wrapped, and ready for you to reheat in your toaster. These are hearty and very filling. (GF, SF, no added fat) $6

Cookies & Bars

Nutter Butter Cookies: oat flour, maple syrup, peanut butter, vanilla. These are shaped into “peanuts”, and filled with peanut butter blended with Better Than Cream Cheese – so they should be kept cold. They sell very well at Midtown Vegan Deli.  3 filled cookies in a container.  (GF, no added oil) $5.

*Samoa Cookies* dipped in chocolate; healthy version of the Girl Scout cookies 3 small cookies in container (SF, GF, no nuts) $4.50

Magic Bars:  on top of an almond flour crust, layers of chopped dates, pecans, coconut set in coconut milk, and topped with chocolate chips.  (GF, SF, no added fat) $5.
