Menu for Rillito Park Farmers Market Sunday 2/26/23, 8:30 am - 12:30 pm

Dear Green Heart Friends,

I hope you are staying WARM & DRY this chilly Wednesday!  And I hope you did not lose power in all the wind!

First, the wedding cake from last week:


The bottom and top tiers were red velvet cake; the middle tier was organic chocolate w/fresh raspberries between the layers; it was all frosted in cream cheez "buttercream".  That frosting can be unstable, and so I spent a lot of time on it, and fortunately, it set up and stabilized very well.  So -- all that work (Tues, Wed, Thurs), and then in several minutes, I added their chosen flowers -- which is what "makes" the cake, at least as far as its appearance.  They had wisely chosen silk hydrangeas with the wedding designer because when I interviewed the floral dept at Safeway last summer (when the cake was ordered) to find out what choice of blue and lavender flowers would be available February 16th, I was told, "not much".  And they were so fortunate to get a beautiful day last Thursday (they were worried last Tuesday & Wednesday); their ceremony was outside just before sunset at La Mariposa.

This week:




Mushroom Ragout over Garlic Mashed Potatoes.  As Leila likes to point out, "Where can you get vegan mashed potatoes in Tucson?"  And we like to offer them with the mushroom ragout; you can order the garlic mashed a la carte if you prefer.

I have been searching for a good photo of our Roasted Veggie Lasagna, and I can't find one -- huh?  Apparently, I have not remembered to photograph it, after it's cut and in its containers. Here is a photo of it on the dinner table in San Miguel de Allende, when I made it years ago for friends there:

Green Heart Menu for February 26th, 2023

Market hours:  8:30 am – 12:30 pm

Horse racing season is on, so the earlier you come, the better the parking is.  (You’ll be happiest by 10.) Be sure to tell any parking attendant who stops you, that you are a farmers market customer; your parking is free.

Southwest Black Bean Soup

Ted will make his delicious and popular black bean soup that he seasons with his epazote. Also, Mexican tarragon, roasted corn, red bells, some tomatoes. (GF, SF) $7.50

Frozen:  Roasted Garlic, Squash & Farro Stew $7;

Corn Chowder $7; Split Pea $7; Roasted Kabocha & Veggie Stew $7

 

GF Roasted Veggie Lasagna w/Puttanesca Sauce

This is the “ no eggplant” version.  The cashew cheez spread we make will be used throughout.  Between the layers of Tinkyada organic brown rice lasagna noodles there will be roasted zucchini, sliced roasted red bells, spinach, broccoli, and a “ground beef” that we make out of lentils and beets.  Still with our oil-free pesto.  And Ted makes the puttanesca sauce, which is a marinara kicked up with capers, shallots, and minced Kalamata olives.

Topped with a small amount of soy-free mozzarella. (GF, soy-free, no added oil) $13.00.

Mushroom Ragout on Garlic Mashed Potatoes

The mashed potatoes are made without oil/fat: organic Yukon Gold potatoes steamed with garlic cloves and mashed with almond milk.  The ragout:  crimini, shiitake, portobella mushrooms simmered in broth, sherry, seasoned, and garnished with parsley.

Sandwiches

Chickpea Mock “Tuna”:  8 oz container, or on Dave’s Killer Bread (this is very low fat, as we make the “mayo” (tofu, lemon juice, apple cider vinegar, Dijon, agave), and high in fiber and plant protein. $9.

Millet Lentil Loaf:  Our sprouted organic millet & lentil loaf, on Dave’s Bread, with our cashew cheez spread & ketchup.  $10 (filling is GF, oil-free, SF)

You may also order a small loaf, no bread $12.

Seitan Reuben:  house made seitan corned “beef”, sauerkraut, our house made cashew cheez, with our Russian dressing, on organic sprouted rye. $11

Lentil Burger Patties: a delicious alternative to frozen “factory-made” patties that always seem to be too spicy, too salty, or too bland. They contain lentils, brown rice, black beans, GF bread crumbs and onions and seasonings (cumin & sage). You will heat them up in a pan on the stove. Can be eaten on a bun (let me know if you need a Dave’s Killer Bun), or by itself. These keep beautifully in the freezer; I kept several over 6 mos! (GF, SF, no added fat) 2 patties $7.

Peanut Butter-Cream Cheez filled Chocolate Cupcakes (GF, no added oil) $4.50

Banana Chocolate Chip Cake:  organic oat flour, fresh ripe bananas, dark semi-sweet chocolate chips, frosted in our tofu-based chocolate frosting (GF, no added fat or nuts) $7/slice

 Blueberry Lemon Uncheesecake  Crust: Organic whole grain oat flour, maple syrup, cinnamon. Filling: organic silken tofu, agave, Better Than Cream Cheese, lemon zest, arrowroot. Topping:  Blueberries, agave, cornstarch. (GF, no added fat, no nuts) $7./slice

Organic Fresh Berry Tart:  oat flour crust, vanilla filling, glazed organic berries (GF, no nuts) $7.50

Organic Apple & Cherry Hand Pie in organic sprouted spelt crust (SF, nut-free) $7.50

Raw Truffles:  :  Almond Overjoy (almonds, coconut, dates, cacao)  (raw, GF, soy-free, oil-free)  $2.50/each or 3/$6

 

 

Alaine’s Rainforest Cake– a loaf made of organic: Brazil nuts, dates,  apricots, pineapple, raisins, craisins, fresh orange zest, agave and brown rice flour. The dried fruit is unsulfured.
